I often get asked how to bake bread and so I thought I record a series of videos, when I bake bread, showing you some basics you can easily replicate at home.

This is the first lesson and the first time I made a video of this kind. So be a bit patient, It will get better over the time – at least I hope so.

In this Lesson I show you:

  • How to start  your own sourdough.
  • How to set up the oven
  • And
  • How to bake some simple bread rolls.

And here the Recipe for the

100 g of fine Rye flour
100 g of water

For the Rolls:
990 g all purpose flour (no self raising)
610 g water, cold
18   g instant yeast
18   g salt
if you like 10 g sugar of honey

Mix a dough out of the ingredients and mix it at medium speed for 10 minutes. Then leave it in the fridge over night or let it rest for at least 1 hour on a warm place.
Divide in equal size portions and form rolls out of it and let these rest for 45 minutes.
Preheat oven to 250 C (485 F)
Reduce heat when you put the rolls in to 200 C (392 F).
Bake for 15 to 20 minutes.

You can roll the buns in seeds (sesame, poppy seeds, flax, sunflower) before you let them rest.
