Devonshire Tea – Scones
We celebrate Queen’s Birthday in New Zealand today. And what would be better than celebrating it with a home made scones for Devonshire Tea.

I cam across these little scones with cream and Jam at a small market in Ohau, north of Wellington. Since then I tried many different ones and there are huge differences. The best Devonshire Tea Scones in the Wellington region and a must stop when you come from the North on State Highway 2 are at Stonestead Devonshire Teas, Te Marua.
I looked for a good recipe for ages. There are quick and simple ones, but they all came not out in the right way. The scones need to be soft and fluffy and melting in the mouth. But they should be crispy outside and have some texture as well.
This Recipe is what I was looking for. It was published at the High Tea Society web page, but I modified it slightly.
We had them with some cream and jam. I added just a tiny bit of icing sugar to the cream and some vanilla extract.
My dough rolled out and ready to be cut.
And here they are fresh out of the oven.
- 3 cups high grade flour
- 1 teaspoon baking powder
- 50 gr sugar
- 1/4 teaspoon salt
- 80 gr unsalted soft butter
- 1 1/4 cup buttermilk
- Mix all dry ingredients in a large bowl and
- then rub in the butter. It will be a very try mixture and there should be now butter flakes any more.
- Add buttermilk and mix carefully until a nice soft dough develops. Do not over-mix.
- Cover the dough in a bowl and let it rest for half an hour.
- Roll out dough to a 2.5cm thick. circle.
- Either cit small dough into small pieces with a knife or use a 5-6 cm cookie cutter.
- Place formed scones on to a lightly floured baking tray.
- Cover the scones with a slightly damp towel and let rest for one hour.
- Preheat oven to 180C (350F).
- Remove the towel and bake 15 minutes. You need to check after 10 minutes and adjust heat and time.
- They are ready when they are slightly brown.
- Serve with whipped cream and some jam.
